For the Dough
- 2 cups flour
- 1 egg
- 1/2 cup water

For the sauce
- 2 tablespoons butter
- 1 teaspoon red pepper flakes
- 1 teaspoon ground oregano
- 1 clove garlic (optional)
- 1 tablespoon olive oil
- Yogurt
First, you need to prepare the manti dough to the ideal consistency. After sifting the flour in a large bowl, gently make a hole in the middle with your hand. Add the egg and salt to this area, then gradually add water and begin kneading the dough. The dough should have a soft consistency but not stick to your hands. After kneading until it reaches this consistency, cover it with a damp, clean cloth. Let the manti dough rest for about 30 minutes.
While the dough is resting, you can start preparing the tortellini filling. To do this, add the ground beef. Mix the spices and butter in a bowl until smooth. If you want to add other ingredients to the filling, you can do so at this stage.
After the dough has rested for a sufficient time, carefully roll it out. Roll out the dough into a large sheet, but make sure it's thick enough to prevent it from falling apart while boiling, yet thin enough to easily boil. One of the tricks to making this type of manti is rolling it out to the ideal thickness. Then, cut the dough into small squares. Each square should measure approximately 4x4 cm. Place a teaspoon of filling into each square and fold the opposite corners together, sealing them. When overlapped, they should form a half-moon shape. Then, fold the other two ends closed, creating a ring-shaped manti.
After covering the manti, bring a pot of water to a boil. Add a pinch of salt and drop the manti into the boiling water. The manti will be cooked in about 4-6 minutes, and using a strainer, drain the water from the pot.
Melt the butter in a small pan. You can also add a small amount of olive oil. Then, add any other ingredients you like, such as red pepper flakes and oregano, and remove the mixture just before the butter burns. Place the manti on a plate and top with the ideal amount of yogurt. Add the sauce to the yogurt and serve.
